The Leveler is an underrated, useful and useful tool. It makes it much easier to evenly distribute the ground coffee before tamping. No grinder ejects the coffee grounds absolutely evenly - and uniformity or consistency is the be-all and end-all of good espresso preparation. Most of the time, the ground coffee ejected from the grinder is spread into a pile by hand or tamped - this happens a little differently each time - and accordingly the tamping produces a different bed of coffee each time. It's actually logical that tamping only compacts the uneven surface. This is where a leveler comes in: it prepares the optimal basis for the tamper by distributing the ground coffee evenly in the portafilter without compacting it (horizontal distribution). With tamping, the remaining air pockets can then be eliminated by vertical compaction. A very useful tool.
