You can watch the bird's head peeking over the edge of the dripper slowly change color as it brews - hopefully from a light-roasted, fruity third-wave coffee, which comes into its own wonderfully with this method of preparation.

The filter paper, which is optimally tailored to the Hario Dripper, binds the fats and oils in the coffee, but allows aromatic substances to pass through unhindered. In addition to the paper quality, the pore size is crucial, which sets the Hario paper apart from other filters, which often have too small a pore size and are therefore too dense. This also retains many aromatic substances that are retained in Hario paper.

The filter paper gives off very little taste, but we still recommend pouring hot water over it before use.
